In this series, Your Health Your Wealth, I will be sharing with you what I eat in order to stay healthy. There are two important factors that really determine your weight and your overall health. Your daily diet is the most crucial part and then your level of activity or what we like to call exercise. My main focus in this series will be your diet. It will be a simple plan that does not involve counting calories or anything like that. I will show you simple but healthy delicious meals that I prepare myself and eat on a daily basis.
These recipes are easy, healthy and consists of your everyday kitchen ingredients. With these meal ideas you never have to worry about over-consumption or not getting all of the necessary nutrients. I will also be sharing with you meals that I prepare when I feel like having a cheat day.
This Ripe Plantain Spinach Egg Salad is not only delicious but super healthy and packed with all the nutrients and protein that you need. Here is what you will need:
2 boiled eggs
A handful of chopped fresh spinach
Half of a ripe plantain cooked in nothing but water
A pinch of Kosher salt
A sprinkle of black pepper
A sprinkle of cayenne pepper
Yes, it is that simple. Be sure to wash your spinach using vinegar and water before chopping them up. You can cook your eggs and plantain at the same time. Ensure that you cut your half of the ripe plantain into two or as many pieces as you like. To the final meal you can add cucumbers, homemade pickles (like I did) or avocado.
Great for breakfast, lunch or an early dinner.
Remember, to be healthy, you have to eat healthy.
