As a vegan, i enjoy being creative with food. There are so many ways to make vegetables tasty and delicious while keeping the entire meal nutritional.
You will find that the recipes don't necessarily tell you how much of each ingredient to use every time. That's because I am from the Caribbean and we eyeball everything even when the measurements are listed!
Here is my take on Veganism: Vegan Spanish rice with Stew Peas, vegetable Stir Fry and Potato Salad! All ingredients will be linked for your convenience.
Back Story: I was super hungry and miserable after a long day without food so I went into the kitchen and turned my frustration into creativity. My husband loved it! I've already had to make it 3 times in one week already!
Pro Tips
Depending on how you like your rice, you can add more or less water.
Always let your rice steam on low heat once the liquid has reduced
Don't let your onions and garlic caramelize too much. You just need to saute them to bring out the flavor.
You can garnish with spring onions.

Veg Stir Fry
Don't cook your vegetables too long. You want them to still have a nice crunch to them. I tend to add the broccoli last.
Sauce
Add less than teaspoonful of red wine vinegar. Your balsamic and amino acid can be added in equal amounts
1 tablespoonful of honey usually does it for me

This is a very Caribbean meal idea made vegan but before veganism there was Ital food (created by Rastafarians). Thus the inspiration for this part of the meal.
It is better to use fresh coconut milk. My husband makes it for me from the actual dried coconut. It adds a freshness and richness to your stew.
The dumplings are optional
You can use any dark bean of your choice like red beans, kidney beans etc.
If you have scotch bonnet pepper, you can add a whole one for flavor.
Goes well with avocado on the side.

Don't overcook or undercook your potatoes. You can always test them throughout the cooking process
Add enough vegan mayo
The amazing thing about this recipe is that you can use a wide variety of different vegetables for the Vegetable Stir Fry. I tend to use a wide range of vegetables depending on how I feel that day. You can use spinach, baby bak choi, bak choi, cauliflower etc. I have tried them all and they taste great! The process will vary for using cauliflower since it does take longer to cook. Let me know if you want that recipe! The Stew Peas is great for days when you just want something hearty, delicious and filling. The Stir Fry gives you that punch of sweetness and crunch. The creamy potato salad adds that extra yummy flavor, sort of like a desert. The rice works well with both but you can do these meals separately.

Stew peas: Arrovehead Mills Whole Spelt Flour, and
Spanish Rice: Tomato Paste
