Vegan Spring Delight Plantain Sandwich

I love a healthy sandwich and so does my husband. Tired of bread? We've got you! This delicious vegan plantain sandwich was created by him for brunch and this is still one of the most clean and sumptuous vegan sandwiches I have ever tasted. It is packed with nutrients and vitamins and is a great bread free alternative. You will love it!


This one is Caribbean inspired since that is our native home and goes great with fresh fruit juice. Our favorite is a combination of pineapple, oranges and pear/guava. If you prefer something hot, we like to go with fresh ginger tea with a little bit of honey. This recipe is easy to make and a delightful treat for guests. They would never know it's vegan!

Ingredients

1 ripe plantain

Grapeseed oil

Pink Himalayan salt

Vegan sausage of your choice (optional)

Vegan cheese (optional)

Vegan mayonnaise (optional)

Pickles

Avocado

Spinach

Tomatoes

Purple onions

Lime

Black pepper/ Cayenne pepper


All ingredients can be found at your local Kroger or Whole Foods. However, some products are linked for your convenience and easy access plus review.



Preparation

  • Peel your green plantains and slice each one according to how big you want your sandwich to be. We did both, several horizontal (for mini) and vertical (length wise down the middle) for medium size. You can go for large by cutting one plantain into 2 pieces horizontally.

  • Lightly fry your green plantain slices on medium heat in grapeseed oil or olive oil. We do not recommend coconut oil for frying as it breaks down easily. 2 minutes on each side.

  • Remove your plantains and press them. You can use a plantain presser or your hands or a bowl. We like to use our hands or press inside the skin of the plantain.

  • Place your plantains back into the hot pan and fry for another 2 minutes on each side for a crispy finish.

  • Place on paper towel and lightly add salt. We use pink Himalayan salt.





We make our guacamole fresh and you can make yours the way that you prefer. We crush our ripe avocados, lightly salt, a sprinkle of Cayenne and black pepper, fresh lime juice ( 2 limes for 2 avocados) and freshly chopped onions. Mix and enjoy.


Note

We generally do not buy a product just because it is labeled vegan. We always check to ensure that we are comfortable with the ingredients. Vegan sausage was our first try and we actually liked it. Though, this is a one time treat as we prefer to make things from scratch. We can be a no box/bag/ processed food vegans.

You can air-fry or place your sausages in the oven. You can melt your vegan cheese if you like as well. You can also substitute the vegan sausages for mushroom or tofu.


Assembly

I like to add my guacamole to my plantain first, then layer on the spinach, tomato, pickles, vegan cheese, vegan sausage, mayonnaise and then my other plantain as the topper.

That first bite is crunchy, creamy, juicy and delicious all at the same time. It gets better with each bite! There also make great finger food by sticking a toothpick through the center, if you opt to make your sandwiches smaller.
